There is a moment at every Indian-restaurant table when the naan basket arrives — impossibly soft, faintly charred, glistening with garlic butter — and someone in the family sighs and says 'we should learn to make this at home'. And then no one does, because everyone thinks you need a tandoor, live yeast and hours of resting.

You don't. This tawa naan uses only curd, baking powder and a pinch of baking soda, giving you the same soft-and-blistered result on a regular pan in ten minutes flat. The topping is where D-O-N Garlic Powder earns its jar — bloomed for 30 seconds in warm butter, it gives you that unmistakable 'garlic naan aroma' without any peeling or chopping.

    Make the dough

    In a wide bowl, mix flour, baking powder, baking soda, sugar and salt. Add curd, warm milk and oil. Bring together by hand, adding warm water only if needed. Knead for 5 minutes into a soft, silky dough — softer than roti dough. Cover with a damp cloth and rest for 20 minutes.

    Prepare the garlic butter

    Melt butter in a tiny pan. Turn off the heat, add D-O-N Garlic Powder, coriander and salt. Stir for 30 seconds — you'll smell garlic bread the moment the powder hits warm butter.

    Shape and pull

    Divide the dough into 8 balls. Roll each into a 6-inch oval, slightly thicker than a chapati. If you like, press a few nigella seeds and chopped coriander onto one side.

    Cook on the tawa

    Heat a cast-iron or heavy tawa on high until smoking hot. Wet one side of a naan lightly with water and slap the wet side down — this makes it stick. Cook 60 seconds until bubbles rise. Now flip the tawa (or the naan onto a bare flame) so the bubbly side sees direct flame for 20 seconds until charred. Brush generously with the D-O-N garlic butter and serve hot.

  • No live flame? Cook the second side by lifting the naan with tongs and toasting it right on the hot tawa surface for 20 seconds — same effect.
  • For a truly indulgent version, brush with garlic-butter mid-cook and again before serving.
  • Cover the finished naans with a clean kitchen towel to keep them steam-soft on the way to the table.
