Gajar halwa is the North-Indian dessert that most families schedule an entire winter afternoon around — grated carrots, ghee, khoya, patience. Beautiful, but not something you casually make before school.
These pancakes take the exact soul of gajar halwa — sweet carrot, warm cardamom, ghee, a hint of khoya — and fold it into a stack of fluffy, orange-flecked pancakes that hit the table in 25 minutes. Half the sweetness, all the joy.
D-O-N Carrot Powder is the shortcut that makes this possible. It is milled from Indian red carrots, gently dehydrated so the natural sugars concentrate. One spoon in the batter turns the pancakes a beautiful natural orange, adds fibre, beta-carotene and a proper gajar-halwa aroma without any grating.
Method
- 01Whisk the dry mix
In a bowl, whisk together flour, D-O-N Carrot Powder, milk powder, jaggery, baking powder, cardamom and salt. The dry mix should look uniform pale-orange with tiny flecks of jaggery.
- 02Add the wet
In a jug, beat the egg (or curd) with milk and vanilla. Pour into the dry ingredients and whisk gently — just until you no longer see streaks of flour. Small lumps are fine; over-mixing gives you rubbery pancakes.
- 03Rest the batter
Let it stand for 5 minutes. This is when the carrot powder fully hydrates and the pancakes turn that beautiful gajar-halwa orange.
- 04Cook and stack
Heat a non-stick pan on medium-low. Brush with ghee, ladle in ¼ cup of batter and cook until bubbles pop on the surface — about 90 seconds. Flip and cook 60 seconds more. Stack and serve with chopped pistachios, a drizzle of honey and a tiny extra spoon of ghee.
